The area where the Adige river flows.
GRAPE VARIETIES
Prevalently Teroldego and small quantities of Schiava and Lagrein.
WINEMAKING
Whole grapes are placed in containers from which the air has been completely removed, and left to macerate for 5-6 days (carbonic maceration). During this period various transformations take place, such as a long drop in acidity, the development of aromas and the absorption of color from the skins into the juice. Immediately after pressing fermentation is activated, producing a very mild wine rich in aroma. Novello delle Vivene is ready for bottling only three weeks following the harvest and it can be sold from October, 30th.
ANALYTICAL DATA
Alcohol 12% vol.
Acidity 5 g/l.
DESCRIPTION
Intense dark ruby. Rich in aroma reminiscent of cherry and plum, soft and full on the palate. Serve at 14/15°C and enjoy it young.
GOES WELL WITH
It can accompany the entire meal, and goes particularly well with pasta and red meat dishes.
